If you like to get the information straight from the horse's mouth then the books in this series (which cover all Adobe products) are the place to start. They used to be a little pricey but the market seems to have caught them up and at £33.99 (with a CD) they are now competitive on price. The series should be considered as supplements to the software handbooks but the CD provides plenty of material to practice on. They keep costs in hand by limiting all but 16 pages to black and white.

Essential reading if you are pursuing the Adobe Certified Expert Qualification, this is one worth having in the library as a point of reference.
